Green Tea is unfermented,

and it is the kind which is closest to the original nature of tea.
It is characterized by a green leaf which produces a clear brew.

The production volume and variety of green tea is the largest among all teas in China,

and it is the most popular form of the beverage.
Among the five kinds of tea,

Oolong is considered to be a special kind of green tea.

Longjing Tea from Hangzhou, Bi Luo Chun (Green Spiral) from Dongting,

Tai Mountain Girl Tea, Japanese Sencha, and Longjing and Bi Luo Chun from Sanxia

are all representative types of green tea.

Black Tea is a kind which is 100% fully fermented.
Its characteristic features are red leaves

which produce a reddish tea liquid after pourring hot water in it , and taste sweet and mellow.

Its classic representatives are Qimen Black Tea, Indian Darjeeling and Ceylon Black Tea.

Yellow Tea is lightly fermented.
The processing technique is similar to green tea,

but with an added step of being steamed under a damp cloth after oxidation,
giving the leaves a slightly yellow colouring.

The leaves and buds are tender, that could make the tea a deliciously mellow of taste.
It comes in three varieties: Yellow Bud Tea (Huangya), Yellow Little Leaf, and Yellow Large Leaf.

Junshan Silver Needle, Mengding Yellow Bud, Huoshan Yellow Bud, and Beigang Burr Point

are its best representatives.

White Tea is slightly fermented to between 10% and 30%.
After picking, the leaves are not rolled, but direct drying or processing.
The snowy silver down which covers the leaves makes it easy to see how this tea got its name.

It produces a pale but lustrous infusion.
Its classic types are Fuding White Tea and Ningbo Silver Needle.

Dark Tea is a kind which is post-fermented.
The ingredients used are older and rougher,

and the processing allows for a longer period of fermentation.
The leaves are dark brown, and the infusion is dark yellow, with a uniquely heavy and mellow taste.
Yunnan Puer Tea is its best-known variety.
