Taiwan Green Tea is produced principally in the north,

with the largest tea plantation areas

in the Sanxia District of New Taipei City.
It is a kind of unfermented tea.
There are different methods of processing,

and the two main types are Steamed Green Tea and Pan-Fired Green Tea.
Taiwan Longjing and Taiwan Bi Luo Chun

are produced principally using the local variety known

as Qingxin Ganzai.

The teas produced possess a special floral scent

as their outstanding characteristic.

The primary production areas are scattered across

Mingjian, Lugu, Zhushan, Renai, Xinyi, Yuchi

and Shuili in Nantou County.
Black Tea is fully fermented, and the leaves are cord-like in shape.

The major types are Honey Scented Black Tea,

Sun Moon Lake Black Tea - Assam, and Taiwan No. 18 Ruby Tea.

The tea is vividly red and has a mellow sweetness

which makes it ideal for use in making milk tea.

 

This refers to tea which is grown at an altitude of more than 1000 meters.
The tea leaves are folded into semi-spherical balls

and known as Pouchong Tea (popularly called Oolong).
The main production regions are newer plantations above 1000 meters

in elevation in the counties of Jiayi and Nantou.

The tea is lightly fermented, lightly fired or left unfired.

It has a light and sweet fragrance

which is reminiscent of the mountains where it was grown.

High-Mountain tea leaves have a fresh jade-green color.

The flavor is rich, sweet, and smooth.

 

This is mainly produced in the Shimen District of New Taipei City

and the Muzha District of Taipei City.

It is a semi-fermented tea,

and its processing method and shape (semi-spherical balls)

is similar to that of Pouchong Tea.
The color of the tea is orange-yellow with a hint of red,

and the taste is strong and rich.

Moreover, the taste of this tea is slightly astringent with a little sweetness,

and there is a hint of the acidity of fruit which imparts a pure and mild flavor.

This is produced in the mountainous region in northern Taiwan,

not far from Wulai Scenic Area.

The most well-known plantations

are in Pinglin, Shiding and Xindian, in Taipei County.
The tea is lightly fermented and lightly fired.
The leaves of Wen Mountain Pouchong tea are cord-like,

and exhibit a jade green hue.

The tea's color is a bright shade of green with honey and a touch of gold,

and has a delicate floral fragrance.

This type of tea is valued for its aroma,

and the richer it is, the better the quality of the tea is.

Dong-Ding Oolong Tea comes from Lugu in Nantou,

where it is grown at an elevation of 500 meters on Dong-Ding Mountain.
The tea is semi-fermented and firing is medium to dark.
The tea leaves are wrapped in cloth and rolled

so that they assume their semi-spherical appearance.

The leaves are dark green

and produce an intense golden infusion.

The aroma is rich and the flavor mellow and sweet,

with an aftertaste to be relished.

This is a famous tea which is only produced in Taiwan.
It comes from plantations in Beipu and Emei in Xinzhu County,

and Touwu and Toufen in Miaoli County.
It is a tea which undergoes a high degree of fermentation (60%-80%).
The leaves are cord-like in shape,

and those which are reddish with white down on them are considered the best.
The color of the tea is amber.

This tea exudes an aroma of ripe fruit and honey,and tastes smooth and mellow.

The very best Oriental Beauty Tea is produced with the help of cicadas

(small green leafhoppers) which bite the leaves of the tea plant.
